To create a non-hardcore world:

Right click the modpack and select "Open Folder"
Go to "config"
Find "hardcoreenforcer-common.toml" and open it
Change "forceHardcoreGeneration = true" with "forceHardcoreGeneration = false" and save

Now you will be able to generate non-hardcore worlds.
